Welcome back to another Skinny Chef Diaries weekly blog! This week’s edition is hotter than ever! As many of you know by now, this blog isn’t just about healthy food and recipes—it’s also a deep dive into my life, my friends, and my family.This week, we’re diving into the secret behind how my stunning and ageless girlfriend, Shadre Leonard, stays looking forever 18!

Alright, I know what you’re all thinking: “How did the Skinny Chef get so lucky?!” Well, it’s simple, really—it took a lot of time, some serious manifestation, and a sprinkle of good fortune!

It’s been over a year now since this extraordinary woman walked into my life, and we’ve been inseparable ever since! We first met on her 33rd birthday, and guess what—she was the one who stopped me and said I looked quite dapper! If you want to know more about those manifestation secrets, you’ll have to catch up on my earlier blog! Haha, but seriously—it’s a true story!


Now, let’s get to the juicy part. Looking forever youthful takes dedication, discipline, and of course, the right diet! Everyone has their own routines and meal plans, but for Shadre, her secret weapon is eating for her blood type. If you missed it, I shared more on this in an earlier blog where Shadre personally broke down the importance of blood type diets.

Today, we’re focusing on the five incredible women who inspire Shadre with their workout routines. She follows and replicates their regimes every week to stay in peak shape. Let’s dive in!

What an incredible lineup of women Shadre has introduced us to! Each one is truly inspiring, and they all look absolutely amazing. Shadre, keep doing what you’re doing, because your quest to stay looking forever 18 isn’t so far-fetched after all! I’m honored to tag along for the ride.


I really enjoyed writing this one, folks, and I hope you all had fun reading it! Before I sign off, I want to leave you with a special recipe from my book. It’s a healthy twist on a classic dish, packed with protein and iron, gluten-free, and absolutely delicious. Trust me—this recipe will help anyone on their quest to stay forever youthful!


Baked Oatmeal Chicken Cordon Bleu

This is a delicious classic French dish of chicken breasts stuffed with ham and Swiss cheese. I have modified this classic dish tobe a healthier alternative. I substitute breadcrumbs and flour with oatmeal, as oatmeal is wholegrain. It contains zinc and iron, both important for people suffering from anaemia. This recipe is also great for maintaining low blood sugar levels and is suitable for people on a low-carb diet, like the Keto or Atkins diets. 

Skinny Chef Diaries :Baked Oatmeal Chicken Cordon Bleu

Recipe

  1. 3 boneless, skinless chicken breasts, butterflied and pounded to ¼ inch thickness 

  2. ½ cup oats 

  3. 1½ teaspoons Dijon mustard 

  4. 2 teaspoons olive oil 

  5. Salt and pepper to taste 

  6. 1 teaspoon paprika 

  7. 3 slices (115g) Swiss cheese 

  8. 3 slices (115g) ham 

  9. Serves 3 


Method

1. Preheat the oven to 425°F/200°C. In a small bowl, mix the oats, paprika and olive oil until the oats are coated evenly. Set aside. Spray a baking sheet with non-stick cooking spray and place chicken,butterflied open, onto the sheet. Season both sides of the chicken with salt and pepper. 


2. Place a slice of ham onto one half of each open chicken breast. Layer cheese slices on top of the ham slices. 


3. Fold the other half of the butterflied chicken over the ham and cheese. Brush the top of each chicken breast with the Dijon mustard, and then coat with the oats, olive oil and paprika mixture. 


4. Bake for 20 minutes or until cooked through. The internal temperature measured with an instant-read thermometer should be at least 165°F/73°C.
